Caramelized Potato Chips
small bag of plain potato chips
kettle cooked works best
dark corn syrup
Preheat the oven to 250F
Spread the chips evening over a baking sheet with parchment paper and place in the oven.
Combine brown sugar, corn syrup, butter and salt in a large saucepan over medium heat. Be sure to stir constantly and bring it to a boil.
Continue to boil for another 3 minutes, without stirring.
Remove from heat, and stir in the vanilla and baking soda.
Pour the caramel over the warm chips and stir to coat.
Bake for 20-30 minutes depending on how dark you like it. (I burned my chips slightly, maybe on purpose maybe by accident.)
