Caramelized Potato Chips
  • 1 small bag of plain potato chipskettle cooked works best
  • 1/2cup brown sugar
  • 3tablespoons dark corn syrup
  • 1/4cup unsalted butter
  • 1/4teaspoon baking soda
  • 1/4teaspoon vanilla extract
  1. Preheat the oven to 250F
  2. Spread the chips evening over a baking sheet with parchment paper and place in the oven.
  3. Combine brown sugar, corn syrup, butter and salt in a large saucepan over medium heat. Be sure to stir constantly and bring it to a boil.
  4. Continue to boil for another 3 minutes, without stirring.
  5. Remove from heat, and stir in the vanilla and baking soda.
  6. Pour the caramel over the warm chips and stir to coat.
  7. Bake for 20-30 minutes depending on how dark you like it. (I burned my chips slightly, maybe on purpose maybe by accident.)
