Sprinkle Biscotti

I’m a purist when it comes to coffee, but not to be mistaken for a coffee snob! I take it black. Nothing in it and the barista better fill it up all the to the top of the cup! (kidding, not kidding) I just genuinely like the taste of coffee – especially good coffee. One of the best parts of having a cup of coffee having the excuse of having a sweet treat with it. I’ll take any excuse to have a sweet treat, you can bet on that!

Typically by themselves, biscotti kinda sucks. It’s usually over-baked, dry, crumble-y, break-your-teeth hard. However, when you dip these cookies into a cup of coffee, you got yourself a real winner of a treat. This recipe is awesome for two reasons, the first being that you can actually eat these biscotti sans coffee because they aren’t super hard, they’re only semi-hard (huge difference). Secondly, the sprinkles! But honestly, how could you not have a smile on your face when you have one of these colourful logs (for lack of better word) in your hands! I bet you have a smile on your face right now just looking at them!

You can totally omit the sprinkles, but then they wouldn’t be sprinkles biscotti, so don’t do that. Dipping them in white chocolate is 100% optional, as these are equally as awesome without. Alternately, you could add more white chocolate if that’s your thing! Or switch it up and use milk chocolate, dark chocolate or melt that shitty chocolate you got for Easter from your weird family member and give it a new, tastier life.

Sprinkle Biscotti
Classic biscotti with some fun sprinkled in!
Prep Time 10 minutes
Cook Time 55 minutes

Ingredients
  • 2/3 cup sugar
  • 1/4 teaspoon salt
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 1/2 teaspoons baking powder
  • 2 cups all-purpose flour
  • 1/2 cup sprinkles
  • 7 oz white chocolate melted
  • 1 tablespoon toppings such as sprinkles salt, etc

  • 2/3 cup sugar
  • 1/4 teaspoon salt
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 1/2 teaspoons baking powder
  • 2 cups all-purpose flour
  • 1/2 cup sprinkles
  • 7 oz white chocolate melted
  • 1 tablespoon toppings such as sprinkles salt, etc
Instructions
  1. Preheat oven to 350. Grease baking sheet or cover with parchment paper
  2. In a bowl combine flour, salt and baking powder. Set Aside.
  3. In another a mixing bowl, beat butter and sugar until smooth
  4. Add vanilla and eggs and continue to mix (Note: Batter will look curdled, don’t worry)
  5. Set your mixer to low speed, slowly add dry ingredients, just before everything is combined, add sprinkles and mix until dough forms
  6. Plop (yes, plop) dough onto parchment lined baking sheet and form into a log (as pictured, or however big you want your biscotti to be) Don’t forget to smooth top of biscotti.
  7. Bake for 20 min
  8. Reduce heat to 325
  9. While oven is reducing, let biscotti cool
  10. Once cooled use a serrated knife and carefully cut dough into ½ inch wide slices
  11. Separate biscotti slices and place back into oven, bake for 20 – 30 minutes or until lightly browned.
  12. Let cool
  13. Once cool, melt chocolate in microwave or double boiler until smooth.
  14. Pour chocolate onto plate
  15. Dip biscotti any way you want (I dipped the bottoms, and drizzled over top. You can also dip once side or dip the entire thing – it’s your life)
  16. Place onto parchment paper
  17. Sprinkle with toppings
  18. Place in fridge to let cool for about 10 minutes.
